Crispy Italian Chicken Cutlets
Every Italian family seems to have one recipe that everyone hopes is on the table when they walk through the door. For ours, it’s chicken cutlets. Crispy on the outside, tender on the inside, they’re just as delicious on their own as they are tucked into a sandwich or transformed into Chicken Parmigiana the next day. Best of all, they freeze beautifully, making them one of the smartest “back-pocket” recipes you can have.
Shrimp Scampi
This is my “company’s coming” pasta. A bag of frozen shrimp, a box of pasta, garlic, olive oil, and a little ingenuity are all it takes to put an elegant dinner on the table in less than thirty minutes. It’s also home to one of my favorite family cooking stories—a happy accident involving lemon sorbet that has earned a permanent place in my freezer.
